Scent is the only sense connected directly to the brain's limbic system — the centre for memory and emotion. Every other sense is filtered and rationalised on the way there. Smell is not.
Emotion first, evaluation second
Sight and sound route through the thalamus, which functions as a relay and, in practice, as an editor. Visual and auditory information is sorted, prioritised and rationalised before the emotional centres of the brain receive it. By the time you have consciously noticed a shop's music, you have already formed a judgement about it.
Olfaction does not work that way. Signals from the olfactory bulb reach the amygdala and the hippocampus before any rational filter is applied. Scent is registered as feeling first and identified as information second — if it is consciously identified at all.
The commercial consequence is significant. A fragrance can change how a room feels to someone who never noticed there was a fragrance, which means it operates below the scepticism a logo, a slogan or an advert has to fight through.
The receptor
Around four hundred types of olfactory receptor sit in the roof of the nasal cavity. Between them they resolve something in the order of a trillion distinguishable odours — far more granularity than colour vision offers.
The bulb
Signals gather in the olfactory bulb, which sits directly beneath the frontal lobe. Uniquely among the senses, its output goes straight into the limbic system rather than being relayed through the thalamus first.
The amygdala
The amygdala attaches emotional weight to the signal before any conscious evaluation has happened. This is why a scent produces a feeling a fraction of a second before it produces a thought.
The hippocampus
Adjacent to it, the hippocampus binds that emotional state to context — place, time, people. That binding is why scent-cued memories arrive whole, and why they are recalled more vividly than memories cued by an image.
